Low Carb Chicken Alfredo Brussels Sprouts Casserole
I have been doing the Keto diet for some time, with several time saving spins I have just for myself. For main dishes at home, we try to follow the Keto diet as much as possible just because we feel better and healthier without loading up on carbs every weeknight! This Low Carb Chicken Alfredo Brussels Sprouts Casserole was something I threw together for an easy casserole idea- keeping with the Keto friendly ingredients.
If Brussels Sprouts aren't on your menu, don't be afraid to try it! They are a great vegetable option especially if you are keeping to a Keto diet and you are tired of cauliflower and broccoli! Add your Brussels Sprouts to your casserole dish to make up the first layer of this casserole.
Next you will add your prepared Chicken Breast Strips, roughly chopped into bite sized pieces. I used the prepared bagged chicken, but if you are into food prep big time and have your own fresh cooked chicken breast chopped up and ready to go– use it! I have been known to prepare several skinless boneless chicken breasts ahead of time in my instant pot, and just chop them up and freeze for recipes like this. Frugal and of course healthy!
Next you will mix up your homemade Alfredo sauce on the stove top. If a homemade sauce sounds scary, it's really no big deal. Sauces are a great thing to learn how to cook at home, just to avoid all those preservatives, added sugar and salt we find in store-bought sauces. For casseroles, you will lose a LOT of flavor using a store-bought Alfredo sauce, so definitely don't skip this step! I love this creamy cheese sauce.
Bake and serve in your casserole dish after pouring the Alfredo sauce over the casserole. I just love low pretty this looks (and of course fresh, with all the green veggies)!

Recipe:
Keto Chicken and Brussel Sprout Alfredo Casserole
This low carb dish will satisfy that casserole craving- without loading up with carbs! Try it for a weeknight main dish!
Ingredients
- 12 oz. brussel sprouts, shredded
- 12 oz. Prepared grilled chicken breast strips, Cut into bite sized pieces
- 2 tbsp Butter, Unsalted
- 3 tsp Minced garlic
- 1 ½ c. Heavy whipping cream
- ½ c. Grated parmesan cheese
- Salt and pepper to taste
- Freshly chopped parsley for garnish
Instructions
- Preheat the oven to 350 degrees.
- Pour the shredded brussel sprouts and the prepared grilled chicken into a well greased casserole dish, and toss to combine.
- In a saucepan over medium high heat, melt the butter.
- Add the minced garlic to the butter, and saute for 30 seconds.
- Stir in the heavy whipping cream and bring it to a low boil. Simmer for several minutes until it has thickened and reduced just a bit.
- Mix in salt and pepper to taste.
- Remove the thickened cream mixture from the heat, and stir in ½ cup of grated Parmesan.
- Pour the alfredo mixture over the brussel sprouts and chicken in the casserole dish, and stir to combine well.
- Bake uncovered for 25 minutes until the top is browned and bubbly.
- Serve immediately topped with freshly chopped parsley for garnish if desired.
