Bacon Mac & Cheese with Gruyere

On my journey to eat less boxed meals, I was looking for  more creative ways to make a really good mac and cheese. Let me tell you this Bacon Mac and Cheese with Gruyere cheese is so rich and creamy, and the bacon really makes the dish. I love the fact that this is a stove top recipe and I don't have to turn on my oven. I also love the fact that I did not have to add any salt and pepper to this recipe for taste. You could literally serve this as an entire or meal or as a side dish.

Total Time 45 minutes

Ingredients

  • 8 ounces elbow macaroni
  • 6 slices of bacon (crumbled)
  • 2 1/2 cups heavy cream
  • 1 1/4 cups shredded Gruyere cheese -not pre-shredded
  • 1 ½ cups shredded white Cheddar cheese
  • 1/4 cup grated Parmesan
  • 2 cloves garlic, minced

Instructions

Boil water with a pinch of salt
Cook pasta according to package instructions; drain well and set aside.
Cook bacon until done about 6-8 minutes. Transfer to a paper towel-lined plate to knock off the excess grease.
In a medium saucepan, combine heavy cream, garlic over medium heat. Bring to a boil and reduce heat for about 4-5 minutes.
Stir in Gruyere and white cheddar until smooth ( I usually do it a handful at a time as it's easier to melt).
Add salt and pepper, to taste.

Stir in pasta and bacon until well combined. Serve immediately or refrigerate leftovers.

Notes

Do not bake. Mac and cheese is ready to eat after stovetop instructions are completed!
