You may be wondering how to use up fresh carrots –especially if you have a lot of them in the fridge or grow your own in the garden!

Instant Pot Candied Carrots work for a family friendly side dish that may even have the kids asking for seconds on their veggies! I love how this recipe brings out natural flavors, but balances it with the candied brown sugar.

Kids and adults will both find this one to be a hit!

Instant Pot Candied Carrots- How to Make:

You do need an Instant Pot or similar electric pressure cooker for this recipe (brand doesn't matter, however cooking times may vary).  

I like to cut my carrots about 1/2″ thick to give them some bite and also not disintegrate when they cook. If you're cutting them super thin, they may fall apart.

Regular carrots from the fresh produce section work best. I would not recommend using frozen carrots for this recipe.

After they are sliced, add to a bowl and toss with sugar and cinnamon.

Then, add to a steamer basket for Instant Pot, or if you don't have one yet (I don't) just fashion a small bowl out of aluminum foil.

You can see how I did mine above. You may need to double the foil if yours is thin.  Put your foil “basket” on top of the trivet with carrots inside.  The trivet comes along with the Instant Pot, so if you are thinking about ordering an Instant Pot, you don't need to worry about buying it separately.

For this recipe, I added my carrots first into the foil first, and then lowered the makeshift pan down into the Instant Pot gently.  However you can manage will work.

After you cook the carrots you can remove them and add to a serving dish. That's it! No more fussing with this recipe! You can move on to other things on your menu and check this one off.

If you aren't serving immediately, keep warm in a small crock or covered dish.  You can find a nice little stoneware dish here.  If you add the hot veggies and cover, it will stay warm for quite a while.

Instant Pot Candied Carrots

This side is perfect for holiday dinners or as a healthy veggie for any weeknight.

Prep Time 10 minutes
Cook Time 17 minutes
Total Time 27 minutes

Ingredients

  • 3 cups carrots, sliced
  • 1/3 cup butter, melted
  • 1/3 cup brown sugar
  • 1 teaspoon salt, to taste
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg

Instructions

    Place 1 cup of water in your Instant Pot and secure the trivet over top.

    You can either use a veggie steamer that fits in your Instant Pot, or a piece of tinfoil shaped into a bowl, and place that over the trivet to hold the carrots.

    Toss the carrots with the melted butter, then season with the brown sugar, salt, cinnamon and nutmeg.

    Place the carrots in the steamer basket or tinfoil basket, and secure the Instant Pot lid.

    Select Manual setting for 2 minutes, natural or quick release.

    Carefully remove the carrots from the Instant Pot and drain out the water.

    Place the insert back into the Instant Pot and add the carrots.

    Select the Saute setting and cook until the butter-brown sugar mixture is sticky and coats the carrots completely, about 5 minutes, stirring constantly.

Notes

Cooking time also reflects the time it takes for the Instant Pot pressure to rise. This may vary.
