These mashed potatoes are creamy, flavorful, and come together in just minutes! Plus, they're perfect for feeding a large crowd. If you have followed the blog for a while, you know I am a huge fan of my Instant Pot.  It not only doubles as a slow cooker, but it can have meals done in a fraction of the time it would take on the stove top or in the oven.

For holiday baking, the Instant Pot is an essential kitchen appliance. It frees up your oven and even the traditional slow cooker to cook other things! So if you have a slow cooker dessert going, and a turkey or ham in the oven, you can still achieve amazing side dishes with the Instant Pot.

Basically this recipe only has four major ingredients: potatoes, water, milk and butter!  No heavy dairy products or crazy ingredients you will find yourself heading the store for.

Since this recipe is made for the Instant Pot, you don't have to make it hours ahead of time.

The Instant Pot takes some time to come to pressure after all ingredients are inside and you turn it on.  It takes longer if there is less inside the pot, but I allow for around 10 minutes before it is ready to start cooking.

After it comes up to pressure, the timer button will show up on the digital screen and then it will start counting down its cook time.

This recipe only cooks in the Instant Pot for 6 minutes! You will let it sit for 3-5 minutes after cooking before releasing the pressure.

After that you can transfer to a mixing bowl and blend the butter, milk and spices.  So you can have fully cooked Mashed Potatoes from Scratch in under 20 minutes!

Since this recipe is so simple, the flavor of the potatoes really has a chance to stand out.  It's also a great compliment to a spicy or flavorful ham or turkey.

Why are my mashed potatoes rubbery?

One of the keys to making light and fluffy mashed potatoes is to start with the right kind of potato.For best results, use starchy potatoes like Russets, which have a high starch content and low moisture content. These potatoes break down easily and absorb liquids well, resulting in fluffy mashed potatoes. Avoid using waxy potatoes like Red Bliss, as they tend to hold their shape and become gummy when mashed.

Once you've selected your potatoes, it's important to cook them properly. Potatoes should be cooked until they are soft all the way through; if they are even slightly undercooked, they will be difficult to mash and will result in rubbery potatoes. Boil the potatoes whole and unpeeled, then mash them while they're still hot for best results. If your mashed potatoes seem dry or pasty, add a little bit of milk or cream until you reach the desired consistency. Finally, resist the urge to overmix the potatoes; too much stirring will make them tough. With these tips in mind, you can make light and fluffy mashed potatoes that everyone will enjoy.

Can I use my Instant Pot to keep mashed potatoes warm?

You sure can! You can keep mashed potatoes warm in the Instant Pot for 1 to 2 hours. Just make sure you turn your Instant Pot on to the warm setting and stir occasionally.

This is a super simple recipe that goes into the instant pot and is ready to serve with minimal effort. Perfect for those busy holiday dinners!

Prep Time 10 minutes
Cook Time 16 minutes
Total Time 26 minutes


  • 2-3 lb potatoes
  • 1 cup water
  • 1 cup milk, 2% or whole
  • 1/4 cup butter, or 1/2 stick, softened
  • 1 dash Salt and pepper, to taste
  • Parsley, For Garnish


  1. Peal and cut potatoes into quarters, insert in Instant Pot
  2. Add water and peeled potatoes into the Instant Pot.
  3. Close the lid and seal the seal. Turn the pressure valve to sealed as well.
  4. Set on manual high for 6 minutes.
  5. Let sit for 3-5 minutes.
  6. Release steam before opening lid.
  7. Place potatoes in a mixing bowl and add butter, salt and pepper, parsley and milk.
  8. Blend with a mixer until smooth.
