This time of year is so busy! Occasionally I'll spend some extra time in the kitchen making a more detailed and time consuming meal but most often my go-to recipes are like this Quick and Easy Italian Chicken. What mom doesn't love quick and easy???
This recipe doesn't have measurements (which I love) so you can adjust it to fit your specific families needs. Only four ingredients are required so this is also an inexpensive meal as well as an quick-clean meal because it's all in one pan! Less dishes to wash? Yes, please!
If you are a fan of pesto then you'll be sure to love this dish. The juices from the pesto and tomatoes help keep the chicken moist and if you love basil like I do then I'd recommend getting some fresh basil to sprinkle on top. I love how it beautifully enhances the chicken.
Most of the time I'll throw together a side salad and add some crusty bread to this meal. Or I'll serve on top of rice and add some kind of veggie. The side-dish possibilities really are endless with this Italian Chicken.
Quick And Easy Italian Chicken
Serve with a salad or pasta side
Ingredients
- Chicken Breasts
- Pesto
- Roma Tomatoes, sliced
- Mozzarella, shredded
- Basil, optional
Instructions
- Preheat oven to 400.
- Pound chicken breasts so they're all the same thickness. Place in greased baking dish.
- Spread pesto liberally on top of each chicken breast then top with tomato slices.
- Sprinkle mozzarella on top of each breast then bake 30-40 mins. or until the chicken is cooked through.
- Top with chopped basil if desired.
