Chipotle Copycat Cilantro Lime Rice

I have always loved Chipotle and similar build-your-own-burrito style restaurants. Both Chipotle and Q’Doba both have amazing rice additions for their burritos. You can also enjoy the Cilantro Lime rice as a base for their burrito bowls. If you haven’t yet tried flavored rice, I’m here to tell you it’s a must! Stop by Chipotle when you can and try it out. We see lots of coupons for both Chipotle and Q’Doba. You can also save with their email clubs and apps.

Obviously this post isn’t to talk about how amazing the burritos and Cilantro Lime Rice are at Chipotle. Sometimes you can’t just head over and order takeout, so the next best thing is a great Copy Cat recipe you can make at home. This easy Instant Pot recipe is a perfect addition to tacos, burritos, or even dishes like Chicken Enchiladas or our Turkey Enchilada Bake.

Cilantro Lime Rice Ingredients

Making Your Cilantro Lime Rice:

Since this is an Instant Pot recipe, you probably know already that it won’t take long to make. You can start this dish in the Instant Pot before you cook your beef or chicken on the stove, and it will be done by the time your tacos are ready. There’s very little active time involved in this recipe.

Gather your ingredients, including long grain white rice, fresh lime juice, water, and chopped fresh cilantro. One word of advice on this recipe– do not substitute dried or freeze dried cilantro. It just won’t taste the same!

Setting Your Instant Pot to Cook Your Rice:

As with any rice recipe, be sure to rinse and drain your rice first. Any gross stuff or dirt will be rinsed away. It also takes extra starches off the rice, so you don’t end up with quite as much “sticky” rice as you would if you didn’t rinse at all. It’s a good thing to get used to doing!

After it’s rinsed and ready to go, add the rice and water to the bottom of your Instant Pot. Set to rice setting and cook as you normally would for your specific appliance. Be sure to follow your manufacturer’s directions since many electric pressure cookers differ.

Once the rice is done cooking and your instant Pot is fully pressure released, remove the lid and fluff rice. The rice paddle that comes with the Instant Pot is the best thing to use. If you don’t have one, a large plastic or flat wooden spoon works as well.

Add your chopped cilantro, lime juice and and mix!

The heat from the instant pot white rice will soften the cilantro almost instantly. There is no need to further cook or warm the rice at this point.

You can serve immediately, or if you aren’t quite ready to eat dinner just put the lid back on and leave the Instant Pot on “warm” setting.

This recipe should feed 3-4 people. If you’re making this for a main dish with just a simple protein and veggies, you can double the recipe, keeping the ratios of water and rice the same. It's a great way to dress up plain instant pot white rice. Enjoy!

Instant Pot Cilantro Lime Rice Close Up

This easy Instant Pot recipe is an amazing side for tacos, burritos, and more.

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • 2 cups long grain white rice
  • 2 ½ cups water
  • ¼ cup cilantro, finely chopped
  • ¼ cup lime juice, freshly squeezed or store bought lime juice

Instructions

    In your Instant Pot, add in 2 cups of rinsed and drained white rice, and 2 1/2 cups of water.

    Select “Rice” on your Instant Pot.

    Make sure your sealing valve is closed.

    When the time has completed, allow it to naturally release.

    Once natural release is finished, open the lid on your Instant Pot.

    Add in your cilantro, and lime juice.

    Mix.

    Serve and enjoy!

Notes

If using manual setting, be sure to do a manual release as soon as cooking time is finished.

Some Electric Pressure Cookers may differ, and you may need to do a manual pressure release once the cooking time is finished. Be sure to read the recipe guide for your specific appliance and follow rice instructions.
