These Grinch Mint Cookies are a must for any upcoming holiday baking. They are absolutely amazing!
It’s that time of year! It’s time for cookie exchanges and sweet treats! This year I got to participate in a virtual cookie exchange hosted by Goodcook and with other awesome bloggers and kitchen experts. They sent me this fun cookie making gift pack which included a cookie turner, sweet mixing bowls, cookie scooper, high temp rubber spatula, cookie baking sheets and a set of 12 holiday cookie cutters. Then it was mine turn to get creative in the kitchen!
To make the Grinch Mint Cookies I used all of the items pictured above except the cookie cutters. We will be using those when Grandmas comes to visit to make cookies for Santa! I’ve been really impressed with these Sweet Creations products. They are very good quality and very affordable. My favorite thing that I got was the cookie scooper. I’ve seen them before but never thought it was something that I needed. Now I’m thinking how did I ever live without it!! I love it…seriously! It make the cookies all the same size and shape.

Now on with the recipe….
Here’s the dough. I added about 10 drops of green food coloring to the dough for the coloring.
The fabulous cookie scooper….did I mention that I LOVE this little gadget!
My little helper! Making Christmas cookies is a yummy tradition to pass down through generations!
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 4 tbsp milk
- 2 tsp. vanilla
- 1 teaspoon mint extract
- 3½ cups flour
- 4 tsp. baking powder
- 1 tsp. salt
- In a large mixing bowl combine butter, sugar, eggs, milk, vanilla and mint extract. Beat the ingredients together until it's all combined.
- In another bowl mix together the flour, baking powder and salt.
- Slowly add the dry ingredients into the wet ingredients and mix until it's all combined and forms a nice soft dough.
- Roll the dough into a small ball ( about the size of a quarter) and drop onto a prepared cookie sheet. You can flatten them out, press them with a fork or leave them in the ball shape.
- Bake for 8-10 minutes at 325 degrees. Let cool on the sheet for a minutes or two and then transfer to a cooling rack.
- You can decorate with frosting, sprinkles or dip in melted chocolate!
