Garlic Basil Chicken –Restaurant Quality Dinner at Home
The yummy flavors of the tomatoes combined with fresh Garlic and basil can’t be beat. We have “spaghetti night” once a week, with a small change-up here and there. Spaghetti is just as easy as a weeknight dinner can be, and of course fits in just about any budget!
We sometimes need a little variety, however, so we came up with this great spin on traditional Spaghetti and Meat-Sauce.
Simply serve this Garlic Basil Chicken with a side of pasta and you’ve got the easiest ever restaurant style meal at home!
What you'll need for Garlic Basil Chicken:
For this recipe I actually used my Instant Pot….yes I know, for a pasta dish!! But stick with me. You will prepare the chicken breasts in your slow cooker or Instant Pot on slow cooker setting, and can actually throw them in while fresh or frozen.
Add Italian Dressing, canned diced tomatoes, and fresh or dried basil and that's it! I use this McCormick Basil but most of us have this in the spice cabinet– brand doesn't matter here. Set your slow cooker or Instant Pot to cook and let it do the work for you! No standing at the stove for this dish.
Recipe:
2-3 Chicken breasts, fresh or frozen
1/2 cup Italian Dressing
1 Can Diced Tomatoes, do not drain
2 Tablespoons Fresh Basil or 1 Teaspoon Dried Basil
1 Lb Thin Spaghetti or Pasta
Add chicken to slow cooker or Instant Pot. Set to “Slow Cooker” Setting if using an Instant Pot, since this recipe does not contain enough liquid to put it on a pressure cooker setting!
Add all other ingredients, except pasta. You will then turn slow cooker on high setting, and allow to cook until chicken is thoroughly cooked to 165 degrees and juices run clear. With poultry I always prefer a high setting for 4 hours (slow cookers may vary) to ensure the food is fully cooked.
After chicken is done, remove from slow cooker with tongs. Serve over prepared pasta. With large spoon or ladle, remove tomato and sauce mixture from slow cooker and pour over chicken and pasta. Add Parmesan Cheese and serve!
