If you hear the title without seeing the picture, you might think of a traditional or old fashioned recipe you would see on a Christmas dessert tray. As a child I always remember fruit cookies, confections, and of course fruit cakes coming out at every Christmas potluck and church event. Truth be told I was one to pass them by.
These cookies aren't your grandma's fruit dessert, however! This Cranberry Orange Cookie is a simple dessert perfect for Charcuterie Boards, enjoying with nuts and savory snacks, and to snack on with all of those delicious holiday beverages.

How to Prepare Cranberry Orange Cookies:
This recipe uses cooked cranberries, so it's ideal for using up those Thanksgiving or Christmas leftovers. If you have a large sized bag (like from Sam's) and you have extra cranberries to begin with, you can always freeze and thaw/cook them later on. As with any fruit, make sure if you're freezing your cranberries to only freeze from the refrigerator or room temperature. Never freeze warmed fruit. Freeze raw cranberries only if they are dry and any rotten or poor quality berries have been removed. Always date and seal well!

I love my chocolate desserts– don't get me wrong– but this cookie is a nice change from the usual cookie recipes you see around the holidays. It pairs very well with apple cider, sparkling grape juice or wassail (hot spice and cider) recipes.

Orange Cranberry Cookies

Make these light and fruit-filled cookies to go with your Christmas or holiday Charcutery board! They are amazing paired with nuts, fruits, and holiday beverages!
Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 teaspoons grated orange zest
- 1/2 teaspoons almond extract
- 2 Tablespoons orange juice
- 3 cups flour
- 1/2 teaspoons baking soda
- 1/2 teaspoons salt
- 1 1/2 cups cranberries, chopped and pre-cooked, and drained
- 1/2 cups walnuts, finely chopped (optional)
Instructions
Preheat oven to 375 F.
Cream together the butter and sugars in a large bowl until smooth.
Beat in the egg until well blended.
Mix in the orange zest, almond extract, and orange juice. Note- if you do not have almond extract, you can alternately use vanilla extract.
In a separate bowl, combine the flour, baking soda and salt; after these are mixed, stir into the orange mixture.
Gently fold in cranberries and walnuts until evenly distributed.
Place dough in the refrigerator for 20 minutes before baking. Drop dough by rounded tablespoonfuls unto an ungreased cookie sheet.
Space cookies 2 inches apart.
Bake 12-14 minutes until edges are golden, then cool on a wire rack for about 5 minutes additionally.

Notes
You can substitute your preferred nuts. Be sure to use plain roasted nuts or lightly salted.
