Easy Holiday Side Dish

I really wanted to try and make something different to have on the Christmas dinner menu this year. For us, staples are mashed potatoes and green bean casserole. However, sweet potatoes are such a rich comfort food and I wanted to include a Sweet Potato Casserole. The marshmallows are so festive and it’s such a beautiful dish.
If you had the mashed potatoes at Thanksgiving and need a new side dish idea for Christmas dinner, this recipe is a must!
I know there are a million different ways to make Sweet Potato Casserole, but I opted for a classic recipe and used Ruthie’s Twisted Harvest Bourbon Brown Sugar Sweet Potato Smashers for the staple ingredient. If you aren’t familiar with Ruthie’s Twisted Harvest, they offer vegetables with wholesome, natural ingredients.
To me it’s important to know what additives go into my vegetables, and Ruthie’s Twisted Harvest Bourbon Brown Sugar Sweet Potato Smashers have NO artificial ingredients or additives. Some frozen products are great for convenience, but then you start looking at all the non-food ingredients and just have to put it back on the store shelf!

What I love about this recipe is it’s semi – homemade. You can use at the staple main ingredient , just add pecans and marshmallows and you’ve got an amazing super easy side dish that taste just like grandma used to make.

You can find Ruthie’s Twisted Harvest Bourbon Brown Sugar Sweet Potato Smashers at your local Walmart in the freezer section. If you are having trouble find it, sometimes they are on the top shelf. Since the top shelf is a smaller space the workers sometimes cram the bags to where you can’t see the product so keep your eyes peeled for that beautiful black bag.

This super easy holiday side dish is made with all natural Ruthie's Twisted Harvest Bourbon Brown Sugar Sweet Potato Smashers. Just three other ingredients!
- 32oz Ruthie's Twisted Harvest Sweet Potato Smashers (2 bags)
- 2 tbsp butter
- 1 cup pecans chopped
- 1-2 cups marshmallows mini, cover top of casserole
Mix sweet potato mash according to package directions in a medium casserole dish.
Add butter and stir,
Top with pecans
Top with mini marshmallows
Bake at 350 for 25-30 minutes or until casserole is bubbly throughout and marshmallows are browned. Cool and serve.
