Peanut butter and powdered sugar

The great thing about the Ritz cookie is that it doesn’t require much in terms of ingredients or steps. Here’s what you need:

  • 48 Ritz Crackers
  • 1/2 cup Peanut Butter
  • 3tbs Powdered Sugar
  • 1/2 cup Butterscotch Chips
  • 1 cup Semi Sweet Chips
  • 2 tsp Shortening

Can I Substitute Peanut Butter?

Yes! While traditional recipes call for peanut butter, almond butter and cashew butter are also great options for those who have allergies or just want more variety in their flavor profile. For an even bigger flavor change up, try sunflower seed butter instead of peanut butter! The sweetness from the chocolate and butterscotch will balance out any bitterness from these non-traditional substitutions nicely. Also if you are worried about all the sugar, try switching to Lilly's Chips and Swerve Sweetner.

How to Store the Leftovers

Once cooled store any leftovers in an airtight container in either room temperature or refrigerator if desired – they will last up to 2 weeks stored this way but most likely won't last that long as they're too good not to eat! If freezing is desired simply freeze any leftover cookies after cooling off completely – they'll last up to 3 months stored this way so you can enjoy them any time you'd like! Just remember that when defrosting allow them thaw at room temperature slowly before enjoying again – about 30 minutes should do it just fine!

Change up the Flavors

If you’re looking to change things up, why not try something a little different? White chocolate and candy cane pieces make for a festive winter treat; dark chocolate and heath chips add a rich flavor; or even milk chocolate with sprinkles would be delicious. The possibilities are endless!

How to Make Ritz Cracker Cookies

Now that you have all your ingredients gathered together it's time to make the cookies. First, Layer 24 crackers on a baking sheet lined with parchment paper or wax paper and set aside. Next, mix the peanut butter and powdered sugar in a bowl. Next, spread a tablespoon of the peanut butter spread on one side of each Ritz cracker. Now place another cracker on top of each cracker – creating a sandwich of sorts.

Lastly melt your chocolate chips and butterscotch chips in small bowls with shortening either in the microwave or double boiler method – stirring occasionally until melted completely then dip each cookie sandwich generously coating both sides evenly before placing back onto parchment paper lined baking sheet to cool off completely before serving – roughly 10 minutes should do it. It helps if you use a fork or a special dipping spoon. Hitting it against the side of the bowl to knock off the access chocolate.
