- 48 Ritz Crackers
- 1/2 cup Peanut Butter
- 3tbs Powdered Sugar
- 1/2 cup Butterscotch Chips
- 1 cup Semi Sweet Chips
- 2 tsp Shortening
Can I Substitute Peanut Butter?
Yes! While traditional recipes call for peanut butter, almond butter and cashew butter are also great options for those who have allergies or just want more variety in their flavor profile. For an even bigger flavor change up, try sunflower seed butter instead of peanut butter! Lastly melt your chocolate chips and butterscotch chips in small bowls with shortening either in the microwave or double boiler method – stirring occasionally until melted completely then dip each cookie sandwich generously coating both sides evenly before placing back onto parchment paper lined baking sheet to cool off completely before serving – roughly 10 minutes should do it. It helps if you use a fork or a special dipping spoon. Hitting it against the side of the bowl to knock off the access chocolate.

These No Bake Ritz Cracker Cookies are so easy and delicous and perfect for a holiday party.
Ingredients
- 48 Ritz Crackers
- 1/2 cup Peanut Butter
- 3 tablespoons Powdered Sugar
- 1/2 cup Butterscotch Chips
- 1 cup Semi Sweet Chips
- 2 teaspoons Shortening
Instructions
- Line 24 ritz crackers on a baking sheet of wax paper
- Mix 1/2 cup peanut butter and 3 tbsp of powdered sugar
- add 1 tsp on to each cracker and add another cracker on top.
- Then add 1/2 cup Butterscotch Chips, 1 cup Semi Sweet Chips, 2 tsp Shortening to a bowl and microwave for 30 sec increments till smooth (50% power)
- Using a fork, dip the cracker in the chocolate mixture and tap the access chocolate off.
- Place on baking sheet with wax paper, sprinkle with crushed candy canes and let sit in fridge till chocolate hardens
